Spanish chicken and chorizo stew recipe – perfect rustic food for the autumn

Spanish chicken and chorizo stew

Not only will you save yourself some money but you could also be acquainted with a popular and timeless Spanish dish known as ‘pollo y estafado de chorize’ – chicken and chorizo stew. The dish has many variations and is flavoured principally by the chorizo. As Spanish chorizo comes in many different degrees of hotness, it is best to sample some first.

Spanish chicken and chorizo stew can be made using red or white wine and the vegetable content can vary greatly. Chillies and olives may be added for additional colour and flavour.

In fact this dish can be made in a number of different ways as long as the two essential ingredients are present – chorizo sausage and chicken.

Here’s a quick and easy Spanish chicken and chorizo stew recipe….

Ingredients for a typical chicken and chorizo stew:

4 chicken breasts (halves)

250 grams chorizo sausage

1 clove garlic

1 large slug of olive oil

1 cupful of white wine

1 large onion

2 red peppers

1 handful de-stoned black olives

1 jar of chickpeas (washed and drained)

2 chopped fresh chillies

500 ml chicken stock (buy in cartons in Spanish supermarkets)

2 bay leaves

Method

1-    Brown the chicken and chorizo together in some hot oil and after five minutes slowly add the wine.

2-    Add the chopped onion and red pepper fry with the meat and brown slightly.

3-    Stir in all the other ingredients, cover in a casserole pot and cook long and slow.
